Preparation Time: 10 minutes
Cooking Time: 40 minutes
Serves: 4
Ingredients
2 cups Italian style peeled tomatoes, coarsely chopped 1 small onion\cooked, chopped 1 green bell pepper\cooked, seeded and chopped 1 clove garlic, minced 1/2 cup seasoned breadcrumbs 1 egg 2 tsps. Italian herb seasoning 1-1/2 lbs. ground chicken, thawed if frozen 1/2 cup shredded mozzarella cheese 3 Tbsps. grated Parmesan cheese Instructions
Preheat oven to temperature 350°F. Pour chopped tomatoes into a fine sieve set over a bowl. Reserve 1/3 cup of the juice. Set remaining tomatoes aside. Combine reserved tomato juice, next 6 ingredients and salt and pepper to taste in a mixing bowl. Mix thoroughly. Add ground chicken and knead with hands. Transfer mixture into a shallow, oiled baking dish or into a large pie plate, pushing up the sides of the chicken mixture to form a shell. Bake 25 minutes. Drain excess liquid. Sprinkle mozzarella over partially baked mixture. Add remaining tomatoes, sprinkle with Parmesan and bake 15-20 minutes longer until chicken is cooked throughout. Let stand 5 minutes before cutting into wedges.

Waldorf Chicken Salad
Preparation Time: 10 minutes Marinade Time: 30 minutes Serves: 6
Ingredients
1/4 cup honey 2 Tbsps. Dijon mustard 1 Tbsp. poppy seeds 1/3 cup lemon juice 1/2 tsp. lemon peel, grated 1/4 cup vegetable oil 12 dried apricots, sliced 2 cups roasted chicken meat, cubed 2 apples\raw, cored and diced 1 cup celery\raw, diced 1/3 cup sliced almonds, toasted 1/4 cup green onions, minced Instructions
Place first 6 ingredients in a bowl and mix well. Stir in apricots and let stand 30 minutes. Add chicken and toss lightly. Chill until ready to serve. To serve, add remaining ingredients to chicken mixture and toss well

Greek-Style Chicken and Pasta
Preparation Time: 5 minutes Cooking Time: 15 minutes Serves: 4
Ingredients
nonstick cooking spray 4 boneless skinless chicken breast halves, cut into 2x1/2 inch strips 1 lb. pasta accents garden herb 1-3/4 cups recipe-ready crushed tomatoes 1/4 cup black olives, sliced 1 oz. feta cheese, crumbled Instructions
Spray a heavy skillet with nonstick cooking spray and place over medium-high heat until skillet is hot. Add chicken and cook 4 minutes, or until it is no longer pink. Add frozen vegetables and pasta, tomatoes, and olives. Bring to a boil. Reduce heat to low, cover and simmer 7-9 minutes, or until vegetables are crisp-tender and chicken is fork tender and no longer pink, stirring occasionally. Sprinkle with cheese before

Ingredients
2 tsps. oil 3/4 lb. boneless skinless chicken breast halves, cut into thin strips 1 lb. pasta accents garlic 3/4 cup salsa 1 Tbsp. cilantro (optional), chopped Instructions
Heat oil in a heavy nonstick pan over medium high heat. Cook chicken 4 minutes, stirring frequently, or until no longer pink. Stir in vegetables and pasta and salsa. Reduce heat to medium, cover pan and simmer 7-9 minutes, or until vegetables are crisp-tender, stirring occasionally. Stir in cilantro and serve with additional salsa, if desired.

Quick Chicken Vegetable Soup
Preparation Time: 5 minutes Cooking Time: 15 minutes Serves: 4
Ingredients
3-1/2 cups chicken stock 1/4 cup water 1 lb. frozen vegetable and pasta mix 1-1/2 cups cooked chicken or turkey, cubed Instructions
Combine stock and water in a saucepan over high heat. Bring to a boil. Stir in frozen vegetables and pasta. Stir in chicken and return to a boil. Reduce heat to low and simmer 8-10 minutes.
Spicy Grilled Chicken Thighs
Preparation Time: 5 minutes Cooking Time: 25 minutes Serves: 8
Ingredients
3 Tbsps. chili powder 2 tsps. ground coriander 1-1/2 tsps. garlic powder 2 tsps. ground cumin 3/4 tsp. dried oregano 1/2 tsp. red chili pepper flakes 8 chicken thighs Instructions
Prepare grill or broiler. Combine first 6 ingredients in a bowl. Spread mixture between skin and meat of each thigh. Grill or broil 25-30 minutes, turning occasionally until cooked throughout. Discard skin

Easy BBQ Chicken
Preparation Time: 5 minutes Cooking Time: 50 minutes Serves: 8
Ingredients
2-1/4 lbs. skinless chicken pieces 1 envelope barbecue coating mix Instructions
Preheat oven to temperature 350°F. Dip chicken pieces into a bowl of water. Empty coating mix into plastic bag. Add chicken pieces, 2 at a time, to bag and shake to coat. Arrange chicken in a 9x13 inch foil-lined baking pan. Repeat process with remaining chicken pieces, sprinkling any remaining mixture over top. Bake uncovered about 50 minutes, without turning. Spoon pan drippings over before serving.
